I had a friend move their bike with no issues and I helped them. They called Peloton so you may want to do that to see if they have any additional recommendations.
They removed the monitor and wrapped it in bubble wrap, removed the power supply from the bike and dropped the seat and handlebars and tightened them. If you're moving yourself I would tie the bike down and put it on some blankets or cushion to minimize impact from vibrations of a long drive. The most delicate part of the bike is the tablet though so I would transport that with you or pack it up very carefully with a lot of protection.
