Considering getting toe cages that attach so that other family members (children with growing feet) can use the bike -- any suggestions? Do they interfere with regular bike shoes clipping in?

No - usually the spin pedals with toe cages have one side that bike shoes can clip into and the other side has the toe cages.
Are you using the standard Peloton pedals now or something else?
I believe you'll need to buy new pedals with toe cages and typically they have clips on the other side - something like this https://www.amazon.com/BV-Shimano-Compatible-Pedals-Included/dp/B081BDDGJ8/
A late response, as my Peloton was only delivered this week. We have the Peloton toe cages, they actually clip in the same way as your shoes would, so can easily be removed when not needed.

Contact Peloton and purchase their clip in toe cages.
